Freeze-dried candy is made by placing candy into a vacuum chamber, where it is frozen to temperatures below -40C and then subjected to low pressure, causing water inside to turn directly from ice into vapor (sublimation). This process removes over 95% of moisture, transforming chewy candies into light, airy, and crunchy treats with intensified, concentrated flavors.
